To celebrate Burns Night on Jan 25th Edinburgh chef Paul Wedgwood created a haggis from scratch in our Dundas St studio for the Scottish Television magazine magazine programme. Taking all the original ingredients, including sheep offal, he showed how you can create your own delicious haggis. We think we’d prefer just to eat it rather than make it ourselves as it tasted delicious!

* Nick_Nairn_Cook_School.jpgWith ‘eating in’ as the new ‘eating out’ increasingly many people are becoming budding master chefs. But without the right kitchen and appliances to cook on our culinary creations can turn out a disaster.

Luxury kitchen designer Kitchens International, with input from leading Scottish chefs, such as Nick Nairn, Andrew Fairlie, Martin Wishart and The Cookschool Scotland, have provided a design brief in how to transform your humble kitchen into a master chef kitchen:

- Worktop space – always remember that if you’re entertaining you need plating up space so never compromise on worktops. Everyday kitchen goods need to be easily accessible too so the worktop must have room for fruit bowls, kettle, toaster etc and plating up room.

- Have all your kitchen units easily accessible and not in one huge long line. U or L-shaped kitchen work best for real chefs as everything is to hand.

- Appliances – induction hobs are definitely the way forward as they’re very responsive, economical and easy to use once you’ve mastered the heat levels and operation.

- Lighting – creating a culinary masterpiece cannot be done in dim light so have strong, direct lighting in the food preparation areas. This means that no mistakes will be made when chopping delicate foods. Locating the food prep area in front of a window is advisable as that gives good natural light.

- Storage space – this is vital as a good cook can never have too many cupboards, although you can have too many gadgets so only keep the ones you actually use.

- Islands – these are the centre of a chef’s kitchen. Locating the hob and a small sink here will mean you can socialise with guests while cooking. But the island must be large to accommodate the food prep, cooking and a breakfast bar, otherwise you’ll feel cramped.

- Bins – a large bin is a necessity and again this should be easily accessible so you can continually get rid of rubbish.

Tristan Campbell, one of the head chefs at the Nick Nairn Cookschool, adds: “As a chef there are many wishes on our list when designing a kitchen but with a good kitchen designer it is possible to create a kitchen which is the perfect setting from which to produce delicious food.”
